Asparagus as a Snack

It is still Asparagus time here and some wonderful looking green ones caught my eye today.






I was not thinking about using it as a side dish to my burger, but as a snack to eat it from warm to cold.

The herbs on my balcony started to explode, so a dressing with a lot of them makes sense. Using a boiled egg to add to it, gives i a bit more substance.

recipe:
500 g green asparagus
1 boiled egg
1/2 cup fresh herbs- use what you have on hand
2 tbsp butter
1 tsp salt
1 tsp sugar
dressing:
2 tbsp olive oil
1 tsp vinegar
3 tbsp asparagus cooking water
1 tsp mustard
1 tsp agave syrup
salt and pepper

Use a pot with salt, sugar and butter in the water and cook the asparagus until done.
Boil the egg and chop the herbs
Make the dressing and get everything together.
