Oven baked Gnocchi

The perfect dish for a day off work. We are having the "Day if Work" today. May 1.
It is sunny but with a cold wind and something comforting to eat is great.
A bag of potato gnocchis from Lidl did the job.
A good and rich tomato sauce with some veggies and 3 different cheeses bubbling in the oven.


Recipe for 4:
800 g bag of potato gnocchi
1 small bulb of fennel
1 red onion
2 spring onions
3 cloves of garlic
1/2 red chili
500 ml tomato passata
50 ml wine
8 green olives
150 g buffalo mozzarella
50 g pecorino
50 g fromaggio capra di stagionato
20 basil leaves
2 tbsp olive oil
1 tsp sugar
Salt, pepper, herbes de Provence
100 ml double cream


Start with the tomato sauce and heat up the oven to 180 C.
Chop all veg and toss in oil and fry until a bit soft.


Add tomato passata and wine and season well. Cook for 10 min.
Heat the water for the gnocchi and do not forget the salt in the water. Cook as said on the package and drain.
Add cream and 2 tbsp cheese to the sauce and half of the basil.
Butter an ovenproof dish and fill in the gnocchi and pour the sauce on top.
Give it a stir and get the basil on. Rip the mozzarella in chunks  then cover that with the rest of the cheese.
Bake in the oven for 20 min.
Let it rest outside the oven for 10 min, then serve.
